Gingerbread Cauliflower Oatmeal

This grain free cauli-oats are definitely feeling the Christmas spirit. They are a delicious, comforting and fragrant start to a cold winter day. Making this gluten free oatmeal bowl is easy, check out the recipe below!
1 cup cauliflower
Splash of milk to blend (can use dairy or nut milk)
1 teaspoon of grated fresh ginger
1 teaspoon cinnamon
1 teaspoon honey
1 teaspoon vanilla sugar
2 teaspoons sunflower seed flour
1 teaspoon linseed flour
Toppings (optional but highly recommended):
Blend the cauliflower with a splash of milk until you get a smoothie-like consistency. Transfer it to a pan and slowly heat it up. Add fresh ginger, cinnamon, honey and vanilla sugar and mix well. Add the sunflower seed and linseed flours and one whole egg. Mix thoroughly while it cooks on slow heat, until it reaches a porridge like consistency. Transfer to a bowl.
