Ana's Brownie and Cookie Dough Cake



An amazing treat that is both gluten free and egg free: a brownie and cookie dough cake made with healthy and feel-good ingredients. This is a recipe by my friend Ana and I asked her if she would be okay with me sharing the recipe here on the blog because I loved this cake! I ate it for dinner and breakfast the next day! Luckily, she agreed to share it here so you can try this treat out too and I hope you enjoy it as much as I did!


This cake has two layers, the brownie base and a cookie dough top. They are both made by mashing up some bananas, adding Greek yogurt for extra moisture and protein, and some nutritionally dense, gluten free flours. The almond and coconut flours that are used, along with the almond butter, ensure that this cake will actually keep you full for a while, which means you can totally get away with eating it for breakfast (like I already did ahah!). Ingredients:

Brownie layer:

2 bananas

100 gr Greek yogurt

2 tbsp raw cocoa powder

1 tbsp almond flour

2 tbsp coconut oil (melted)

1 tsp almond butter

pinch of salt

pinch of baking soda

1 tsp sugar

1 tsp honey

cinnamon

30 gr dark chocolate


Cookie dough layer:

1 banana

50 gr Greek yogurt

1 tbsp coconut flour

1 tbsp almond flour

1 tbsp coconut oil (melted)

1 tsp almond butter

1 tsp sugar

1 tsp honey

pinch of salt

pinch of baking soda

cinnamon

30 gr dark chocolate


Instructions:

1. Let's start with the brownie layer: in a bowl, mash the bananas well. Add the honey, sugar, yogurt, almond butter, a pinch of salt and oil and mix well.


2. Add the dry ingredients: cocoa powder, almond flour, cinnamon and baking soda. Mix until a uniform dough forms, without any lumps.


3. Roughly chop the dark chocolate and add to the dough. Set aside.


4. Prepare the cookie dough layer by mashing a banana in a new bowl. Add the honey, sugar, yogurt, almond butter, a pinch of salt and the melted coconut oil.


5. Add the dry ingredients to the second layer: coconut and almond flour, baking soda and cinnamon.


6. Again, roughly chop the dark chocolate and add to the dough.


7. To assemble the cake, lightly grease the baking pan and add the brownie layer and smooth it out. Then, add the cookie dough layer on top.


8. Bake at 170°C (338°F) for 20 minutes, or until a toothpick comes out clean.


9, Serve with an additional generous drizzle of almond butter and sprinkle some dark chocolate on top! Bon appetit!
