    Easy Pistachio and Cranberry Cookies

    These easy gluten free cookies are full of melt in your mouth aroma. The delicious combination of flavors comes from the aromatic orange zest and juice, nutty pistachios and sweet cranberries. If you wish, you can dip the baked cookies into some melted dark chocolate, or eat them straight away (like I did!). In any case, they will make a wonderful addition to your coffee or tea time.



    Ingredients:

    100 gr softened butter

    60 gr sugar

    pinch of salt

    30 ml fresh orange juice

    1 egg

    125 gr rice flour

    125 gr gluten free flour mix

    8 gr baking powder

    25 gr shelled pistachios

    40 gr cranberries




    Instructions:

    1. In a bowl, mix the softened butter, sugar and a pinch of salt. Mix using an electric mixer until the butter and sugar turn into a fluffy homogenous mass.

    2. Grate an orange and add the zest to the bowl, along with the fresh orange juice. Add the egg and mix well.


    3. Add the dry ingredients: the flours and baking powder.


    4. Chop the pistachios into smaller chunks. Fold in the chopped pistachios and cranberries to the batter using a spatula.


    5. Wrap the dough and let chill in the fridge for at least an hour.


    6. Form the cookies and place on a baking pan lined with baking paper.


    7. Bake at 180 degrees Celsius for 10 minutes, until the cookies get a nice golden color.

    Halloween Zombie Cookies

    Gluten free zombie cookies are here to make your Halloween super fun and super spooky! A great and easy recipe that you can make with kids (or awaken your inner child!), and enjoy yourself while you decorate and eat them. The cookies have a light green color, courtesy of matcha. Use a gingerbread man cookie cutter to cut these out quickly, but if you're feeling like it you can also cut out different shapes and make a, let's say, zombie llama (I have done that myself hehe!). So many fun possibilities!

    Originally, I had planned on using white chocolate for the decoration, because that would make the cookies look like mummies, but I didn't have any at home. This is why I used dark chocolate but it turned out delicious and I used colored cookie decorating pastes (store bought) to give the cookies some additional details!

    Ingredients:

    100 gr butter

    1 packet vanilla sugar

    pinch of salt

    30 gr sugar

    55 gr gluten free flour mix

    100 gr oat flour

    75 gr cornstarch

    1 tsp baking powder (4 gr)

    8 gr matcha powder

    1 egg

    Decoration:

    dark or white chocolate

    colored cookie decorating pastes


    Instructions:

    1 Cube cooled butter and put in a bowl. Add the sugars and pinch of salt and use your hands to combine them.


    2. Prepare the dry ingredients: mix the gluten free flour, oat flour, cornstarch, baking powder and matcha powder. Add to the butter and combine them a little bit using your hands.


    3. Add one egg and use a spatula to first mix it into the batter and then use your hands to form a homogenous cookie batter.


    4. Wrap the batter in plastic foil and leave in the fridge for half an hour.

    5. Divide the cookie batter into halves to make it easier to roll out. Place the batter between two layers of plastic wrap and roll it out to the desired thickness: between 0.5-1 cm.


    6. Use your gingerbread man cookie cutters to cut out the shapes.


    7. Bake for 20 minutes at 180 degrees Celsius.


    8. Once the cookies have cooled down, you can decorate them using dark or white chocolate and add the details using the decorating pastes.


    9. You're ready for a super fun Halloween!

    Gluten Free Cardamom Cookies


    Delicious and easy to make - these buttery gluten free cardamom cookies are the perfect addition to your autumnal cup of tea. These cookies are melt-in-your mouth good when they are hot from the oven, and as they cool down they will become a bit more crispy. They keep their texture and flavor for several days, uncovered on the kitchen counter and I imagine you could keep them fresh for even longer if you put them in a sealed cookie tin.

    My favorite tea to sip on while eating these cookies is an apple and cinnamon tea, but they also go really well with a cup of coffee or milk! :)



    Ingredients:

    110 gr butter

    30 gr sugar

    8 gr vanilla sugar (1 packet)

    pinch of salt

    130 gr gluten free flour mix

    100 gr buckwheat flour

    1 tsp baking powder

    1/2 tsp cardamom

    1/4 tsp cloves

    1 egg


    Instructions:

    1. Take the chilled butter out of the fridge, cube it and place in a large bowl.


    2. Mix the sugar, vanilla sugar, and salt with the flours and spices.


    3. Add the dry ingredients into the bowl and use your hands to loosely combine them with the butter.


    4. Add one egg and use a spatula to mix it, and then use your hands to knead the mixture into a homogenous dough.

    5. Wrap the dough with plastic foil and let it sit in the fridge for 30 minutes.


    6. Flour your work surface, or place the dough between two layers of plastic wrap before rolling it out.


    7. Once you've rolled the dough out to a thickness of about 0.5 cm, take your cookie cutters and cut the desired shapes. Repeat the process until you've used up all of the dough.


    8. Place the cookies on a baking pan lined with baking paper and bake for 15 minutes at 180 degrees Celsius.
